Arabic Date Old-fashioned

Roasted Pecan, Almond and Date-infused Jack Daniels No7 Tennessee Whiskey, Homemade Sumac Honey syrup, Homemade spice bitters, Orange Twist.

As a young boy, my Father regularly took me to the restaurants at Cleveland Street in Sydney, a stretch of Lebanese and Arabic Restaurants; I loved the flavours, the nuts, and the Dates. This old-fashioned Cocktail is crafted with Arabic flavours of Date, Pecan,

Almonds, Sumac spice and honey. The Arabic Date Old Fashioned pays homage to my Cleveland Street experiences.

Ingredients

60mls Roasted Pecan, Almond and Date-infused Jack Daniels No7 Tennessee Whiskey,

10mls Homemade Sumac Honey syrup, 

2 dashes of Homemade spice bitters, 

Orange Twist.

In an old-fashioned glass with block ice stir with 60mls Roasted Pecan, Almond and Date-infused Jack Daniels No7 Tennessee Whiskey, 10mls Homemade Sumac Honey syrup, and 2 dashes of Homemade spice bitters.

Garnish

Passion in the Garden G&T

Sipsmith Gin, Homemade Elderflower and Strawberry Liqueur, Passionfruit, Elderflower tonic, Chrysanthemum Bitters



G&T-inspired Cocktails have been a big Hit on recent Blue Bar Cocktail menus, as have Elderflower Cocktails; however, the quality of the Elderflower syrups available in India has been extremely sweet and with an artificial elderflower taste. For this Cocktail, I have imported premium organic Elderflower to craft my own Elderflower and Strawberry liqueur to create a delightful new G&T cocktail.

Ingredients

30mls Sipsmith Gin, 

30mls Homemade Elderflower and Strawberry Liqueur, 

half Passionfruit, 

top with Elderflower tonic, 

2 dashes Chrysanthemum Bitters

Mixology

Build in a Highball glass, half a Passionfruit, 30mls Sipsmith Gin, 30mls Homemade Elderflower and Strawberry Liqueur, and 2 dashes Chrysanthemum Bitters. Fill the glass with ice and top with Elderflower Tonic.

Stir all ingredients in a highball glass.

Garnish

Half a Passionfruit and an Edible flower

 

Modern Cosmopolitan

Mixed berry-infused Grey Goose Vodka, Homemade Orange liqueur, Lime, Berry Kombucha, Orange twist.

As a Cocktail bartender during the rise and rise in popularity of the TV show Sex in the City. Ladies started ordering Cosmopolitans, thinking they were Sex in the City Divas.

I twist the classic Cosmopolitan Cocktail with the addition of the much healthier and tastier Berry Kombucha instead of Cranberry juice.



INGREDIENTS

45mls Mixed berry-infused Grey Goose Vodka, 

15mls Homemade Orange liqueur, 

10mls Lime Juice, 

30mls Berry Kombucha, 

Orange twist.

Mixology

Shake with ice, 45mls Mixed berry-infused Grey Goose Vodka, 15mls Homemade Orange liqueur, 10mls Lime Juice, 30mls Berry Kombucha, and double strain into a chilled Martini Coupe.

Garnish

Italian Rob

Rampur Single Malt Whisky, Amaro Montenegro, Homemade Sweet vermouth, Angostura bitters, Orange Twist.

I twist the classic Rob Roy Cocktail. The base spirit is the gorgeous Rampur Indian Single Malt Whisky. I added Amaro Montenegro, which added a stunning spiciness to the Cocktail.



Ingredients

40mls Rampur Single Malt Whisky, 

15mls Amaro Montenegro, 

20mls Homemade Sweet Vermouth, 

2 dashes of Angostura bitters, 

Orange Twist.

Martini Coupe

Mixology

stir in a mixing glass with ice, 40mls Rampur Single Malt Whisky, 15mls Amaro Montenegro, 20mls Homemade Sweet Vermouth, and 2 dashes of Angostura bitters. Double strain into a chilled Martini Coupe.

Best so far, Negroni

Campari, Aperol, Bombay Sapphire Gin, Otto's Athens Vermouth, Kirsch, Balsamic Vinegar.

I had a guest who liked his Negroni with a mix of Aperol and Campari, and I like my Negroni with balsamic vinegar. I added some Kirsch, which gave the Cocktail a subtle Cherry flavour. The guest told me it was the best Negroni he had ever had, and I felt it was the best I had ever created.



Ingredients

10mls Campari, 

10mls Aperol, 

20mls Bombay Sapphire Gin, 

20mls Otto's Athens Vermouth, 

10mls Kirsch, 

2mls Balsamic Vinegar.

Glass

Mixology

Stir in a mixing glass with ice, 10mls Campari, 10mls Aperol, 20mls Bombay Sapphire Gin, 20mls Otto's Athens Vermouth, 10mls Kirsch, and 2mls Balsamic Vinegar. Double strain over an ice block into an Old Fashioned Glass.

Erdinger and Grapefruit Spritz

Aperol, Hapusa Himalayan Dry Gin, Erdinger, Prosecco, Grapefruit

I created this Cocktail for the Taj Palace Oktoberfest, making around 100 in one evening. A very Citrussy Spritz with the addition of the pleasant German Wheat Beer Erdinger.


Ingredients

30mls Aperol, 
30mls Hapusa Himalayan Dry Gin, 
60mls Erdinger, 
60mls Prosecco, 
half a Grapefruit

Mixology

Freshly squeeze and strain half a Grapefruit into the glass, add ice and add 30mls Aperol, 30mls Hapusa Himalayan Dry Gin, 60mls Erdinger, and 60mls Prosecco, stir in the glass.

Garnish

Dehydrated grapefruit


 

Illusion of Romance 

Clementine infused Buffalo trace Bourbon Whiskey, Ottos Athens vermouth, Homemade Cinnamon Syrup, Angostura bitters, and Orange Twist.

The classic Manhattan inspires this Cocktail. I infused Buffalo Trace Bourbon whiskey with tangy Clementine, boosting the citrus notes and adding a subtle Cinnamon note.




Ingredients

50mls Clementine infused Buffalo trace Bourbon Whiskey, 

15mls Ottos Athens vermouth, 

5mls Homemade Cinnamon Syrup, 

2 dashes of Angostura bitters, 

Orange Twist.
