Iglesia de San Jacinto

Apricot and Rosemary infused Patron Silver Tequila, homemade limoncello, Lemon, Red wine, and Lemon Foam.

Iglesia de San Jacinto Cocktail is named after a famous monastery in Mexico City, a lemon-driven Tequila cocktail with subtle additions of Apricot, Rosemary and Red wine.



Ingredients

45mls Apricot and Rosemary infused Patron Silver Tequila, 

15mls homemade limoncello, 

half a Lemon, 

Golden Sparrow Red wine, 

topped with Lemon Foam.

Mixology

Shake with ice, 45ml Apricot and Rosemary infused Patron Silver Tequila, 15ml homemade limoncello, and half a Lemon. Double strain into a Goblet glass. Float 10mls of Golden Sparrow Red wine and top with Lemon foam.

Grape and Pineapple Pisco Sour

Pineapple-infused Barsol Pisco, Green Grapes, Sauvignon Blanc, Star Anise syrup, lemon, Egg Whites

The Pisco sour has been one of the world's trendiest cocktails over the last ten years, and its sour taste complemented with the freshness of Pineapple, Green grapes and Sauvignon. Blanc balanced with a gentle touch of Star Anise.

Ingredients

60mls Pineapple-infused Barsol Pisco, 

10 Green Grapes, 

15mls Sauvignon Blanc, 

5mls Star Anise syrup, 

Half a lemon, 

1 Egg Whites

Glass

Coupe

Mixology

Muddle 10 Green Grapes and add 1 egg white, 60mls Pineapple-infused Barsol Pisco, 15mls Sauvignon Blanc, 5mls Star Anise syrup, Half a lemon, ice and Shake, remove Ice and Dry shake.

Pour into a Coupe glass

Thai Whiskey sour

Wild Turkey Bourbon Whiskey, Homemade Lemongrass liqueur, Lemon, Egg Whites, Lotus bitters, Lemongrass, Kaffir Lime leaf, Ginger.

I gained a love for the flavours of Thailand whilst working as a brand ambassador in South East Asia about 20 years back. The traditional Thai flavours of Lemongrass, Kaffir Lime and Ginger enhance the world's most popular Sour Cocktail.


Ingredients

50mls Wild Turkey Bourbon Whiskey, 

20mls Homemade Lemongrass liqueur, 

Half a Lemon,

1 Egg White, 

2 dashes of Lotus bitters, 

half a Lemongrass stick, 

5 Kaffir Lime leaf, 

1 Julian of Ginger

Glass

Mixology

Muddle half a Lemongrass stick and 1 Julian of Ginger. Add 5 ripped Kaffir Lime leaves, 1 egg white, 1 freshly squeezed Half Lemon, and 2 dashes of Lotus bitters, ice, 50mls Wild Turkey Bourbon Whiskey, 20mls Homemade Lemongrass liqueur.

Shake and Double strain into a Coupe.

Garnish

Dehydrated Lemon and Kaffir lime leaf pegged to glass.
