Red Wine, prepared with Citrus Peel, Cinnamon, Pepper, Cloves, Star Anise Nutmeg and Sugar

1 Campo Viejo Rioja Tempranillo Red Wine
1 grated Nutmeg
2 Cinnamon
4 cloves
2 wings star anise
30mls Orange Juice
half lemon Rind
half orange Orange Rind
6 Black Pepper
2 bar spoon spice sugar

cook at medium temperature 1/4 of red Wine and all other ingredients bring to boil lower temperature add remaining Wine and simmer

60mls Martell VS Cognac
2 dash Angostura Bitters
15mls Lime Juice
4 Cloves
2 Cinnamon Sticks
chunk Ginger
20mls Honey
90mls Boiling water
over top Grond Pepper

Mixology
Muddle ginger, add honey and Cognac, top with boiling water and Stir; strain through a tea strainer. Ground Pepper on top of the drink.
