Amaro Italiano, Pineapple, Strawberry and Elderflower Syrup

Ingredients

60mls Amaro Italiano, 

6 chunks Pineapple, 

30mls Pineapple Juice

30mls Strawberry Puree,

10mls Elderflower Syrup,

Glass

Luigi Bormoili Retro Fizz

Mixology

Muddle 6 chunks Pineapple, add 30mls Pineapple Juice, 30mls Strawberry Puree, 10mls Elderflower Syrup, 60mls Amaro Italiano, and ice.

Shake and Double Strain into Luigi Bormoili Retro Fizz glass.

Garnish

Dehydrated Pineapple and Strawberry slice on the base.




Pre-School Negroni

Zero Alcohol Negroni Liqueur, Tonka Bitters, Orange twist

Ingredients

90mls Zero Alcohol Negroni Liqueur, 

2 dashes of Tonka Bitters, 

1 Orange twist

Glass

Old Fashioned

Mixology

Stir with ice, 90mls Zero Alcohol Negroni Liqueur, and 2 dashes of Tonka Bitters.

Double strain into an Old Fashioned Glass with a clear ice block.

Toddlers Margarita

Zero Proof Reposado, lime, Orange, Salt Rim

Ingredients

90mls Zero Alcohol Reposado, 

30mls lime Juice, 

Half an Orange, 

5mls Suger Syrup

Salt Rim

Glass

Urban Dazzle Martini Coupe

Mixology

Rim glass with lime then salt.

Freshly squeeze Half an Orange, add 90mls Zero Alcohol Reposado, 30mls lime Juice, 5mls Suger Syrup. and ice.

Shake and double strain into salted rimmed Urban Dazzle Martini Coupe.

Garnish

Dehydrated orange and Lime on a peg



Summer Tonic

Grapefruit Tonic, Watermelon, Orange, Kaffir Lime Tart, 

Jazz Dance

Amaretto, Hazelnut Syrup, Black tea, Tonka Bitters, topped with a Pomegranate, Orange and Raspberry Foam. Chocolate Sauce Treble Clef

Ingredients

60mls Zero Proof Reposado

15mls Amaretto, 

10mls Hazelnut Syrup, 

15mls Black tea, 

2 dashes Tonka Bitters, 

Pomegranate, Orange and Raspberry Foam.

Luigi Bormoili Accademia Coupe

Mixology

Shake with ice, 60mls Zero Proof Reposado, 15mls Amaretto, 10mls Hazelnut Syrup, 15mls Black tea, 2 dashes Tonka Bitters, and shake.

Double strain into Luigi Bormoili Accademia Coupe.

Top with Pomegranate, Orange and Raspberry Foam.

Lychee Juice, Jasmine Tea, Homemade Vanilla Syrup.

100mls Jasmine tea
60mls lychee Juice
30mls Vanilla Syrup

Shake with ice 100mls Jasmine tea, 60mls lychee Juice and 30mls Vanilla Syrup. double strain into Coupe Glass

Ingredients

Half a Stick of Lemongrass

4 Kaffir Lime Leaves

150mls Orange Juice

mixology

Muddle Lemongrass, Rip 4 Kaffir Lime Leaves, add 150mls Orange Juice and Ice.

Shake and double strain into an ice-filled old-fashioned glass.

Strawberry, Blackberry, blueberry, Cranberry Juice

Ingredients

30mls Strawberry Puree

30mls Blackberry Puree

30mls Blueberry Puree

Top with Cranberry Juice

Build over ice 30mls Strawberry Puree, 30mls Blackberry Puree,  30mls Blueberry Puree and top with Cranberry Juice, swizzle all ingredients with a bar spoon

45mls Apricot Puree

120mls Cranberry Juice,

Shake with Ice, 30mls Blackberry Puree, 45mls Apricot Puree, 120mls Cranberry Juice, and 10mls Balsamic Vinegar.  Double strain over Ice into Ice filled Collins Glass

3 Black olives on a Cocktail stick

Sweet Hot Passion

Passion Fruit, vanilla Syrup, Tabasco, Sprite

Ingredients

15mls of Passionfruit Puree

10mls Vanilla Syrup, 

3 dashes of Tabasco,

top with Sprite

mixology

Build over ice in a Collin Glass, 15mls of Passionfruit Puree, 10mls Vanilla Syrup, 3 dashes of Tabasco, then top with Sprite and swizzle with a bar spoon.
