Melodic Winter

Homemade Winter Spice syrup, Apple and Fig


Ingredients

2 Figs

Half a Red Apple

150mls of Real Activ Apple Juice

15mls Winter Spice Syrup

Glass

RCR Opera Champagne Saucer

mixology

Muddle 2 Figs and Half a Red Apple. Add ice, 150mls of Real Activ Apple Juice, 15mls Winter Spice Syrup shake and Double strain into Ice Cream Coupe Glass.

Garnish

2 halves of Fig on the side of the glass.


White Rose

White chocolate sauce, Apricot, passionfruit, Balsamic vinegar, Rose Tea


ingredients

30mls White chocolate sauce, 

20mls Apricot puree, 

10mls passionfruit puree, 

5mls Balsamic vinegar, 

60mls Rose Tea

Small Goblet

Mixology

Shake with ice, 30mls White chocolate sauce, 20mls Apricot puree, 10mls passionfruit puree, 5mls Balsamic vinegar, and 60mls Rose Tea.

Double strain into a small Goblet

Garnish

Dried red Rose and dried Apricot

Chamomile Tea, Pomegranate, Homemade Fennel Syrup

Ingredients

10mls Fennel syrup

90mls Chamomile Tea

45mls Pomegranate Juice

Glass

Martini

Mixology

add 45ml Pomegranate Juice, 90mls Chamomile Tea, 10mls Fennel syrup and ice. Shake and double strain into a chilled Martini Glass

Garnish

Sprinkle a line of Chamomile tea on top of Cocktail

Watermelon, Blackberry, Hibiscus Tea


Ingredients

3 chunks of Watermelon

60mls Hibiscus tea

30mls Raspberry Puree

Glass

Brass Martini

Mixology

Muddle 3 chunks of Watermelon, add 60mls Hibiscus tea, 30mls Blackberry Puree and Ice.

Shake and double strain into a Brass Martini.

Garnish

Watermelon Chunk, Blackberry and Hibiscus Tea Buds

Fermented Black Bean Syrup, Plum, Apple Juice


ingredients
15mls Fermented Black Bean Syrup,
1 Plum,
90mls Real Activ Apple Juice

Eclat Small Old Fashioned

muddle 1 Plum, add 15mls Fermented Black Bean Syrup, 90mls Real Activ Apple Juice and Ice. shake and double strain into a small Old fashioned glass

Garnish

Dehydrated Apple, dehydrated plum, Plum Slice and fermented Black Bean

Lychee Juice, Jasmine Tea, Homemade Vanilla Syrup.

100mls Jasmine tea
60mls lychee Juice
30mls Vanilla Syrup

Shake with ice 100mls Jasmine tea, 60mls lychee Juice and 30mls Vanilla Syrup. double strain into Coupe Glass

Half a Stick of Lemongrass

4 Kaffir Lime Leaves

150mls Orange Juice

Urban Dazzle Martini Coupe

Muddle Lemongrass, Rip 4 Kaffir Lime Leaves, add 150mls Orange Juice and Ice.

Shake and double strain into an ice-filled old-fashioned glass.

Ingredients

30mls Strawberry Puree

30mls Blackberry Puree

30mls Blueberry Puree

Top with Cranberry Juice

Build over ice 30mls Strawberry Puree, 30mls Blackberry Puree,  30mls Blueberry Puree and top with Cranberry Juice, swizzle all ingredients with a bar spoon

30mls Blackberry Puree

45mls Apricot Puree

120mls Cranberry Juice, 

10mls Balsamic Vinegar

Mixology

Shake with Ice, 30mls Blackberry Puree, 45mls Apricot Puree, 120mls Cranberry Juice, and 10mls Balsamic Vinegar.  Double strain over Ice into Ice filled Collins Glass

3 Black olives on a Cocktail stick


Sweet Hot Passion

Passion Fruit, vanilla Syrup, Tabasco, Sprite



Ingredients

15mls of Passionfruit Puree

10mls Vanilla Syrup, 

3 dashes of Tabasco,

top with Sprite

mixology

Build over ice in a Collin Glass, 15mls of Passionfruit Puree, 10mls Vanilla Syrup, 3 dashes of Tabasco, then top with Sprite and swizzle with a bar spoon.
