40mls Dark Cherry Infused Woodford Reserve Bourbon, 

20mls Jacobert Kirsch d’Alsace, 

Crème de Menthe Wash, 

20mls Chaat Masala, Rock Salt Coca Cola reduction, 

1 dash Angostura Bitters, 

A quarter of a freshly squeezed lemon

How to Mix

Wash Urban Black Chalice with Crème de Menthe.

In a mixing Glass stir, 40mls Dark Cherry Infused Woodford Reserve Bourbon, 20mls Jacobert Kirsch d’Alsace, 20mls Chaat Masala, Rock Salt Coca Cola reduction, 1 dash Angostura Bitters, A quarter of a freshly squeezed lemon with Ice.

In Creme De Menthe washed Urban Black Chalice and Double Strain.

Garnish

Lemon twist, Cherry and Mint Sprig


State of Love and Trust

Bombay Sapphire Gin, Cointreau, Golden Sparrow Pinot Grigio, Fermented Eggplant, Egg Whites

Ingredients

45mls Bombay Sapphire Gin, 

15mls Cointreau, 

20mls Golden Sparrow Pinot Grigio, 

2 pieces Fermented Eggplant, 

5mls Fermented Eggplant Fluid, 

1 Egg Whites

How to Mix

Muddle 2 pieces Fermented Eggplant, add 45mls Bombay Sapphire Gin, 15mls Cointreau, 

20mls Golden Sparrow Pinot Grigio,  5mls Fermented Eggplant Fluid, 1 Egg Whites and Ice.

Shake, remove Ice, Dry shake.

Pour into Chilled Coupe Glass

Gunpowder Goddess

Gunpowder Gin, Strawberry, Thai Green Chilli, Coriander, Balsamic Vinegar

Ingredients

60mls Gunpowder Gin, 

30mls Strawberry Puree, 

half finger width slice of Thai Green Chilli, 

4 Coriander leaves, 

5mls Balsamic Vinegar

Goblet

How to mix

gently muddle half finger width slice of Thai Green Chilli, add 4 Coriander leaves, 5mls Balsamic Vinegar, 60mls Gunpowder Gin, 30mls Strawberry Puree, and Ice

Shake and Double Strain over Ice Block into a Goblet

Thai Green chilli, Corriander Sprig

Aberlour 12-year-Old Double Cask Matured Speyside Single Malt Whisky, Homemade Dried Fruit and Nut Whisky Liqueur, Ginger, Orange, Pinot Noir Red Wine, Homemade Spice Bitters

Ingredients

50mls Aberlour 12-year-Old Double Cask Matured Speyside Single Malt Whisky, 
15mls Homemade Dried Fruit and Nut Whisky Liqueur, 
1 Julian of Ginger, 
Quarter fresh squeezed Orange, 
10mls Pinot Noir Red Wine, 
2 dashes of Homemade Spice Bitters

How to Mix the Cocktail?

Muddle 1 Julian of Ginger, add Quarter fresh squeezed Orange, 
10mls Pinot Noir Red Wine, 

2 dashes of Homemade Spice Bitters, 50mls Aberlour 12-year-Old Double Cask Matured Speyside Single Malt Whisky, 
15mls Homemade Dried Fruit and Nut Whisky Liqueur, Ice and Shake.
Double Strain into Coupe Glass with a Crafted Cube of Ice in It.

Garnish

Orange Twist with Taj Hotels Logo burnt onto it using Stamp.
Using the Orange Zest leftover from the Freshly Squeezed Orange in the Cocktail, Cutaway fruit and pith. Place dried Fig, Pecan, Dried Apricot and Prune on top.

Ingredients

40mls Grappa, 

40mls Espresso, 

15mls Homemade Crème De Cacao, 

10mls Martini Rosso, 

Sambuca Wash

How to mix

Wash Tea Cup with sambucca, 

in Mixing tin add 40mls Grappa, 40mls Espresso, 15mls Homemade Crème De Cacao, 10mls Martini Rosso,  and ice,  shake and strain into Sambucca washed tea Cup.

Garnish

3 coffee beans, Star Anise, cacao nibs


Maharaja Chai

Jaisalmer Gin, Homemade Lemongrass Liqueur, Lemongrass, Masala Chai Foam

Ingredients

45mls Jaisalmer Gin, 

15mls Homemade Lemongrass Liqueur, 

small piece of Lemongrass, 

Top with Masala Chai Foam

How to Mix

Muddle Lemongrass, add 45mls Jaisalmer Gin, 15mls Homemade Lemongrass Liqueur, and Ice. Shake and double strain into chilled Coupe Glass.

30mls Raisin and Pistachio Nut Infused El Ron Prohibido Rum,
20mls Homemade Delirium Noctorum Belgium Ale and Spice Reduction,
5mls Talisker 10-year-old Single Malt Whisky,
1 dash of Angostura Bitters
1 Flambe Orange twist

How to mix the Cocktail?

Stir with Ice, 30mls Jack Daniels Single Barrel, 30mls Raisin and Pistachio Nut Infused El Ron Prohibido Rum, 20mls Homemade Delirium Noctorum Belgium Ale and Spice Reduction, 5mls Talisker 10-year-old Single Malt Whisky and 1 dash of Angostura Bitters.
Double strain over Ice into a small highball.

Bacardi Ocho Anos 8-year-old Grand Reserva Rum, Apricot, Green Apple, Paprika Chilli powder, Roasted Cumin Powder, Sprite

Ingredients

60mls Bacardi Ocho Anos 8-year-old Grand Reserva Rum, 

30mls Apricot puree, 

4ls Apple juice

a quarter of a bar spoon Paprika Chilli Powder, 

a quarter of a bar spoon Roasted Cumin Powder, 

Top with Sprite

How to Mix

line side of Ice cram coupe Glass with a strip of Cummin powder and a strip of  Paprika Chilli Powder

add 60mls Bacardi Ocho Anos 8-year-old Grand Reserva Rum, 30mls Apricot puree, add 45mls apple juice, a quarter of a bar spoon Paprika Chilli Powder, a quarter of a bar spoon Roasted Cumin Powder and ice.

Shake and Double Strain into over Ice Block in an Ice Cream coupe.

Top up with Sprite

The core of Green apple with a strip of Cummin powder and a strip of  Paprika Chilli Powder and dry red Chilli


Not a Stranger

Stranger and Sons Gin, Edinburgh Gin Elderflower Liqueur, Raspberry, Balsamic Vinegar, Pepper and Strawberry Preserve Rim

Ingredients

50mls Stranger and Sons Gin, 
20mls Edinburgh Gin Elderflower Liqueur, 
15mls Raspberry puree, 
2ml Balsamic Vinegar,
Lemon Twist
Cracked Black Pepper and Strawberry Preserve Rim

How to Mix the Cocktail?

Rim Coupe first with Strawberry Preserve, Then Rim with Cracked Pepper (the Pepper will stick to the Jam).
In a mixing glass add 50mls Stranger and Sons Gin, 20mls Edinburgh Gin Elderflower Liqueur, 15mls Raspberry puree, 2mls Balsamic Vinegar, and Ice.
Stir and Double strain over a handcrafted block of Ice.

Garnish 

Flambe Lemon Twist

Smoke of Venezia

Tanqueray Ten Gin, Patron Silver Tequila, Grapefruit, Homemade Bay Leaf syrup, Egg Whites and Cacao Nib Smoke.

Ingredients

50mls Cotswolds Gin
20mls Corralejo Blanco Tequila
Quarter Freshly Squeezed Grapefruit
10mls Homemade Bay Leaf syrup
1 Egg Whites
Cacao Nib Smoke

Glass

Goblet

Method

Using a smoke Gun fill a Bottle with Cacao Nib Smoke and cover
In a shaker add ice and all ingredients and shake, strain out the liquid from ice and Dry shake
Pour liquid into Chilled Goblet

Garnish

Bay Leaf, Grapefruit wedge and sprinkled about 5 Cacao Nibs on top of the Foam.
